Peanut Butter Cookies
3oz margarine  
4oz white sugar
2oz brown sugar
1 egg
4oz peanut butter
1 tsp bicarbonate soda
6oz plain flour
1 tbsp milk
  • Mix margarine and sugar together
  • Add egg and peanut butter, mix well
  • Add remaining ingredients and mix well
  • Roll mixture into balls, slightly flatten them and place on greased baking tin
  • Bake at 180°C for 10-15 minutes
  • Take biscuits off the tin when hot and allow to cool

Chocolate Biscuits
6oz self raising flour  
6oz sugar
6oz margarine
3 eggs
1 tbsp cocoa
  • Mix margarine and sugar together
  • Add eggs to the mixture one at a time
  • Add in the flour and cocoa powder and thoroughly stir
  • Spread the mixture onto a greased baking tin
  • Bake for 10-15 minutes at 180°C
  • Take biscuits off the tin when hot, cut into pieces and allow to cool

 Banana Bars or Apricot Bars

1-3 ripe bananas (depending on how strong you want the flavour to be) or 1 tin apricots drained  
6oz margarine
6oz brown sugar
8oz plain flour
1/2 tsp bicarbonate of soda
4oz rolled oats

  • Mix the margarine and sugar together
  • Add the flour, bicarbonate of soda and oats
  • Grease a tin with margarine and spread half the mixture onto it
  • Slice the banana or apricot and lay over the biscuit mixture
  • Pour the remaining half of the biscuit mixture on top and even it out
  • Bake at 180°C for 25-30 minutes
  • Turn out of tin when hot and cut into pieces

Flapjack
4oz margarine  
4 tbsp golden syyrup
3oz brown sugar
8oz oats
  • Melt margarine and syrup in a saucepan
  • Remove from heat, add remaining ingredients and mix well
  • Place on greased baking tin and level out mixture
  • Bake at 180°C for 20-25 minutes, or until golden brown
  • Cut into squares, lift off the tin and allow to cool
