Eve's Pudding

1lb apple or pear with a sprinkling of sugar  
6oz self raising flour
6oz sugar
6oz margarine
3 eggs

  • Bring the apple or pear to the boil in a large saucepan
  • Transfer to an ovenproof dish
  • In a bowl beat sugar and margarine together
  • Add the eggs one at a time to the mixture
  • Mix in the flour and stir thoroughly
  • Pour the topping onto the fruit and spread out carefully
  • Bake at 180°C for 25-30 minutes

 Variation - Put 1 tbsp cocoa in at the same time as the flour to make the topping chocolate flavoured

 Fruit crumble

1-1 1/2lb fruit of you choice (e.g. gooseberry, apple, plum, pear, rhubarb, cherries etc.)  
4oz margarine
2oz sugar
6oz flour

  • Mix flour and margarine in a bowl by rubbing it between your fingers
  • Add sugar to mixture
  • Bring the fruit of your choice up to the boil and stir, transfer to an ovenproof dish
  • Pour the dry crumble on top of the fruit and spread evenly
  • Bake at 180°C for 20-30 minutes

 Fruit Cobbler

1 to 11/2lb fruit of your choice (e.g. gooseberry, apple, plum, pear, rhubarb, cherries etc.)  
2oz sugar
4 tbsp water
8oz self raising flour
2oz margarine
1/4 pint milk

  • Cook fruit of your choice with the 4 tbsp water and sugar, until just tender
  • Put flour and margarine into a bowl and rub together with your fingers
  • Pour milk in the centre of the bowl and mix with a knife
  • Make the mixture into about 8-10 scones
  • Put tender fruit into an ovenproof dish
  • Place scones on top of the fruit
  • Bake at 180°C for 10-15 minutes
