Ingredients :
  • pastry for 9" pie, unbaked
  • 1 x 16 oz can salmon
  • 1 tbsp lemon juice
  • 1 onion, minced
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley
  • 6 egg, beaten
  • 1½ cups milk
  • 1 tspn seasoned salt
  • dash pepper, white or black
Preparation & Cooking Instructions :
  1. Bake crust in a 450°F oven for 5 minutes.
  2. Drain salmon liquid into a cup.
  3. Put salmon in a bowl and remove bones and skin; flake salmon.
  4. Put salmon in pastry; sprinkle with lemon juice.
  5. Cook onion in the butter; transfer to the pie crust and sprinkle with parsley.
  6. Mix the salmon liquid with eggs, milk, and seasoned salt and pepper; pour over salmon.
  7. Bake quiche at 350°F for 45 to 50 minutes, or until firm.
  8. Serve hot.
