Béarnaise Sauce

Serves : ¾ cup


Ingredients :

  • 3 tbsp white wine
  • 1 tbsp dried tarragon leaves
  • 1 tspn lemon juice
  • ½ cup butter
  • 3 egg yolks
  • 1 tspn fresh chopped tarragon

Preparation and Cooking Instructions

  1. Combine the wine, tarragon and lemon juice in a small pan. Over high heat reduce to 2 tbsp, then strain.
  2. In another small saucepan, melt the butter and heat to almost boiling.
  3. In a blender or food processor, process the egg yolks until blended. With the machine running, add the butter in a slow thin stream.
  4. Turn the machine to slow, add the reduced wine mixture. Process just until blended. Stir in fresh tarragon. Place in a serving bowl or suitable container until required.
