Serves : ¾ cup
Ingredients :
- 3 tbsp white wine
- 1 tbsp dried tarragon leaves
- 1 tspn lemon juice
- ½ cup butter
- 3 egg yolks
- 1 tspn fresh chopped tarragon
Preparation and Cooking Instructions
- Combine the wine, tarragon and lemon juice in a small pan. Over high
heat reduce to 2 tbsp, then strain.
- In another small saucepan, melt the butter and heat to almost boiling.
- In a blender or food processor, process the egg yolks until blended.
With the machine running, add the butter in a slow thin stream.
- Turn the machine to slow, add the reduced wine mixture. Process just
until blended. Stir in fresh tarragon. Place in a serving bowl or suitable
container until required.
