Serves : 4-6 Preparation

Ingredients :
- 2lb shin of beef
- 9 cups cold water
- 1lb young turnips, peeled
- 1 tspn black pepper
- 1 tbsp light soya sauce
- 1 tspn salt
- 1 tspn garlic, finely chopped
- 1 tbsp ground sesame seeds
- 1-2 tbsp red pepper, finely chopped
- 1 spring onion, chopped
Preparation and Cooking Instructions
- Wash and dry the beef and trim off surplus fat. Place in a saucepan,
cover with the water, and leave to stand for 30 minutes. Bring to the
boil, skim until no more scum rises to the surface, add turnips and
black pepper. Cover, reduce heat to the minimum, and simmer very gently
for 2½ hours. Remove beef, cut into cubes, put into a soup tureen,
sprinkle with soya sauce, salt, garlic, sesame seeds, red pepper and
spring onion. Mix well and leave to stand for 10 minutes for the spices
to flavor the meat.
- Keep over a pan of hot water.
- Reheat the soup with the turnips, pour it over the beef and serve.
