Caribbean ginger pepper sauce

This sauce is an ideal accompaniment for fish or chicken

Ingredients :

  • 2 tbsp jalapeņos, seeded & minced
  • 1 tspn cayenne pepper
  • ¼ tspn salt
  • 2 tbsp cornstarch
  • ¼ cup granulated sugar
  • ¼ cup lime juice, preferably fresh
  • ¼ cup unsweetened pineapple juice
  • 1 cup water
  • ½ cup soy sauce
  • 2 tbsp fresh ginger, peeled & shredded
  • ½ cup pineapple chunks
  • 2 tbsp Chardonnay or dry white wine
  • 1 tbsp chopped cilantro
Preparation & cooking instructions
  1. In a saucepan, blend the salt, cornstarch, sugar, lime juice, and pineapple juice until smooth.
  2. Premix and gradually stir in the water, soy sauce, ginger, Jalapeņo, and cayenne.
  3. Cook over medium heat, stirring constantly until the sauce is thick.
  4. Finish the sauce by stirring in the pineapple chunks, Chardonnay, and cilantro.
