Chicken schnitzels Florentine

Ingredients :

  • For tomato sauce : 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 14oz can chopped tomatoes
  • ¼ cup white wine or water
  • 1 tspn sugar
  • ½ tspn dried oregano

  • 1 lb English spinach, washed, drained and stalks removed
  • 4 chicken breast fillets, tenderloins removed
  • ¼ cup cream
  • flour, for coating
  • 1 oz butter
  • 1 tbsp olive oil
  • 3 oz Gruyére or cheddar cheese, grated

Preparation and Cooking Instructions

  1. To make tomato sauce, heat the oil in a pan. Add the onion and garlic and cook for 5 minutes until soft. Add the tomatoes, wine, sugar and oregano and cook for 15 minutes over low heat until thick and reduced.
  2. Roughly chop the spinach and place in a pan. Cook over medium heat for 2-3 minutes, or until it is wilted. Cool and squeeze dry. Fold through the cream and season.
  3. Trim the chicken of any fat or sinew, pat dry and place each piece between 2 sheets of plastic wrap. Using a mallet or rolling pin, gently flatten out to ½ " thick.
  4. Lightly coat the chicken with the flour and shake off any excess. Heat the butter and oil in a large heavy-based frying pan. Cook the schnitzels for 2 minutes each side, or until lightly browned.
  5. Top each schnitzel with the spinach and grated cheese. Pour the tomato sauce around the chicken, taking care not to cover the cheese.
  6. Cover the pan and cook over low heat for 10-15 minutes, or until the cheese has melted.
