Chilled Cod Pâté with Melba toast

Serves : 4-6  Preparation time : 10 minutes + chilling  Cooking time : 15 minutes


Ingredients :

  • 500g smoked cod
  • ¼ cup olive oil
  • 1 clove garlic, crushed
  • 2 tbsp plain flour
  • ¼ cup lemon juice
  • 1 cup milk
  • Melba toast
  • lemon and dill, to serve

Preparation and Cooking Instructions

  1. Cover fish with cold water in a large pan. Bring slowly to simmer, cook uncovered 10-15 minutes. Strain water, flake the flesh and remove bones.
  2. Heat oil in a large pan, add garlic and flaked fish, stir 1 minute. Add flour and stir over a low heat. Add lemon juice gradually to the pan, stirring until the mixture is smooth. Add milk gradually and stir until mixture boils and thickens.
  3. Pour mixture into food processor bowl and process 30 seconds until smooth. Spoon into individual serving dishes ( ½ cup capacity) and refrigerate until firm. Serve with melba toast and garnish with dill and lemon.
