Spinach and Pinenut quiche

Ingredients :

  • puff pastry
  • 2 cups cooked silverbeet or spinach
  • 2 tbsp butter
  • salt and black pepper, to taste
  • 250g cottage cheese
  • 3 eggs, lightly beaten
  • ¼ cup grated Parmesan cheese
  • 3 tbsp thick cream
  • nutmeg
  • ½ cup pine nuts, lightly browned in butter


Preparation and Cooking Instructions :

  1. Line quiche dish with pastry.
  2. Cook spinach 9 or green leaves of silverbeet) with butter, salt and pepper for 5 - 10 minutes or until soft. Drain and purée in food processor.
  3. Beat together cottage cheese, eggs, cheese, nutmeg and ream. Stir in spinach and pinenuts.
  4. Put into pastry shell, cook for 30 - 40 minutes in moderately hot oven ( 190º - 200ºC ).
