Ginger Feijoa Muffins

Serves : makes 12 muffins
Ingredients :
- 1 cup flour
- ¼ tspn salt
- 4 tspn baking powder
- 1 tspn ground ginger
- 1 cup wholemeal flour
- 4 tbsp butter
- ¼ cup sugar
- 1 cup peeled, chopped feijoas
- ¼ cup finely chopped crystallized ginger
- ¾ cup milk
- 2 eggs
Preparation and Cooking Instructions
- Sift the flour, salt, baking powder and ground ginger into a large
bowl. Stir in the wholemeal flour. Rub the butter into the flour mixture,
using your fingertips. Add sugar, feijoas and ginger.
- Beat milk and eggs together lightly. Make a well in the center of
the mixture. Pour the egg-milk mixture into the well and mix together
to just moisten.
- Three-quarter fill greased muffin tins and bake at 200°C for 18
minutes
