Ginger Feijoa Muffins

Serves : makes 12 muffins


Ingredients :

  • 1 cup flour
  • ¼ tspn salt
  • 4 tspn baking powder
  • 1 tspn ground ginger
  • 1 cup wholemeal flour
  • 4 tbsp butter
  • ¼ cup sugar
  • 1 cup peeled, chopped feijoas
  • ¼ cup finely chopped crystallized ginger
  • ¾ cup milk
  • 2 eggs

Preparation and Cooking Instructions

  1. Sift the flour, salt, baking powder and ground ginger into a large bowl. Stir in the wholemeal flour. Rub the butter into the flour mixture, using your fingertips. Add sugar, feijoas and ginger.
  2. Beat milk and eggs together lightly. Make a well in the center of the mixture. Pour the egg-milk mixture into the well and mix together to just moisten.
  3. Three-quarter fill greased muffin tins and bake at 200°C for 18 minutes
