Serves : 4 x 8" or 2 x 12" pizzas
Ingredients :
- 2 tbsp granulated sugar
- ¼ cup warm water
- 2 tbsp dry active yeast
- 2 cups milk
- 1 tspn salt
- 3 tbsp butter
- 6½ cups all purpose flour
- 1 egg, beaten
- ¼ cup heavy cream
Preparation and Cooking Instructions
- Mix 1 tspn of sugar in the warm water. Dissolve the yeast in the water
and let soft for 10 minutes.
- In a saucepan, combine the milk, remaining sugar, salt and butter.
Scald, then cool. Transfer to a mixing bowl.
- Stir in the yeast mixture and 3 cups of flour. Beat for 2 minutes.
Cover. Allow to rise for 1 hour, then beat in the remaining flour, egg,
and the heavy cream
- Knead in a mixer for 8 minutes. Cover and allow to rise.
- Divide the dough evenly into either two or four and place onto well
greased pans. Allow to rise for 15 minutes. Spread the dough evenly
over the pans by pressing it out from the center with your fingertips,
covering the entire pan.
