Hawaiian teriyaki burger

Ingredients :
- 2 cloves garlic, crushed
- 1 tbsp soft brown sugar
- ½ tspn ground black pepper
- 3 tspn grated fresh ginger
- 2 tbsp fresh chopped coriander
- ½ cup teriyaki marinade
- 1 small onion, finely grated
- 500g lean beef mince
- 1 tbsp peanut oil
- 4 small thin slices fresh pineapple or canned pineapple rings
- 1 tbsp sesame oil
- 1 red onion, thinly sliced
- 2 slender baby eggplant, thinly sliced lengthwise
- 1 small red capsicum, cut in thin strips
- 1 banana chili, thinly sliced lengthwise
- 1 tbsp balsamic vinegar
- 1 large damper
Preparation and Cooking Instructions
- Combine crushed garlic, sugar, pepper, ginger and half the chopped
coriander with teriyaki marinade in a small bowl. Reserve ½ cup
of the mixture and set aside. Add onion and mince to the remaining mixture.
Mix with hands until well combined. Divide mixture into 4 portions and
shape into round patties.
- Heat peanut oil in a large frying pan. Cook patties 3-4 minutes each
side or until they are brown and cooked through. Remove from pan, keep
warm. Cook pineapple slices in the same pan or on a grill plate. Brush
with reserved marinade mixture while cooking.
- Heat sesame oil in large frying pan. Add onion, eggplant, capsicum
and chili. Cook over medium heat 2-3 minutes or until just softened.
Stir in remaining coriander and balsamic vinegar. Remove from heat.
- Cut damper into quarters and halve the quarters horizontally. Lightly
toast and butter damper, if desired. Place the base of each quarter
slice of damper on a serving plate. On each base place a meat patty,
slice of pineapple and fried vegetables. Finally, top with the remaining
quarters of sliced damper.
