Honey chicken muffins

Ingredients :

  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 1 tbsp baking powder
  • 1 tbsp dry mustard
  • ½ tspn baking soda
  • ½ tspn salt
  • 2 cups skinless boneless chicken breast, cooked & chopped
  • 1 cup buttermilk, at room temperature
  • ¼ cup applesauce, at room temperature
  • 2 egg whites, whipped
  • 2 tbsp honey

Preparation and Cooking Instructions

  1. Preheat oven at 350°F. Prepare muffin tins.
  2. In a mixing bowl, combine flour, cornmeal, baking powder, mustard, baking soda, and salt.
  3. In a another mixing bowl, combine chicken, buttermilk, applesauce, egg whites, and honey.
  4. Mix wet ingredients with dry ingredients just until moistened.
  5. As a suggestion use an ice cream scoop to fill muffin tins to ¾ full.  Bake for 20 minutes.
