Serves : About 4 cups
Ingredients :
- 1 kg peeled, seeded and chopped honeydew melon
- 1 kg caster sugar
- 2 tspn finely grated lemon rind
- ¼ cup lemon juice
Preparation and Cooking Instructions
- Combine all ingredients in a large plastic or ceramic bowl ; mix well.
Cover ; stand overnight.
- Transfer mixture to a large, heavy-based pan. Bring to boil ; simmer,
uncovered, for about 30 minutes, or until a small amount of jam jells
when tested on a cold saucer.
- Stand jam for 10 minutes. Spoon into hot sterilized jars ; seal while
hot.
