Honeydew melon jam

Serves : About 4 cups


Ingredients :

  • 1 kg peeled, seeded and chopped honeydew melon
  • 1 kg caster sugar
  • 2 tspn finely grated lemon rind
  • ¼ cup lemon juice

Preparation and Cooking Instructions

  1. Combine all ingredients in a large plastic or ceramic bowl ; mix well. Cover ; stand overnight.
  2. Transfer mixture to a large, heavy-based pan. Bring to boil ; simmer, uncovered, for about 30 minutes, or until a small amount of jam jells when tested on a cold saucer.
  3. Stand jam for 10 minutes. Spoon into hot sterilized jars ; seal while hot.
