fruit chutney
Ingredients :
- 4 joints chicken
- 2 tspn salt
- 3 oz butter
- 2 medium onions, sliced
- 1 tspn chili powder
- ½ tspn turmeric
- 1 tspn curry powder
- 1 tspn ginger
- 2 cloves garlic, crushed
- 2½ cups coconut milk
- few slices green capsicum
Preparation and Cooking Instructions
- Rub the chicken joints with the salt.
- Heat the butter in a frying pan and gently fry the onions until clear.
Remove onions from the pan and add the chili powder, turmeric, curry
powder, ginger and garlic. Cook gently for a few minutes. Add chicken
and fry on all sides until golden. Add the onions and the coconut milk.
Simmer, covered, for about 20 minutes or until tender. Remove lid, and
cook for a further 5 minutes. Garnish with pepper slices.
- Cooks notes : Good accompaniments are rice,
apple and mint sambal,
and mixed fruit
chutney.
