Ingredients :
- 4 cups white vinegar
- 2 cups water
- 2 cloves garlic, halved
- 350g button mushrooms
- 350g Swiss brown mushrooms
- 2 x 150g punnets oyster mushrooms
- 2 strips lemon peel
- 2 tspn dried thyme leaves
- 2 small fresh red chilies, halved
- 2 tspn salt
- 1-2 cups light olive oil
Preparation and Cooking Instructions
- Combine vinegar, water and garlic in a pan, bring to the boil. Add
mushrooms, simmer uncovered for 2 minutes. Remove from heat, drain mushrooms
discarding the vinegar and garlic mixture.
- Combine lemon peel, thyme, chilies, salt and mushrooms in a large
bowl. Mix well using hands.
- Heat oil in a medium pan until hot.
- Pack mushroom mixture into hot, sterilized jars. Pour enough hot oil
over mushrooms to completely cover ; seal while hot. Store mushrooms
in refrigerator.
