Marinated mixed mushrooms

Ingredients :

  • 4 cups white vinegar
  • 2 cups water
  • 2 cloves garlic, halved
  • 350g button mushrooms
  • 350g Swiss brown mushrooms
  • 2 x 150g punnets oyster mushrooms
  • 2 strips lemon peel
  • 2 tspn dried thyme leaves
  • 2 small fresh red chilies, halved
  • 2 tspn salt
  • 1-2 cups light olive oil

Preparation and Cooking Instructions

  1. Combine vinegar, water and garlic in a pan, bring to the boil. Add mushrooms, simmer uncovered for 2 minutes. Remove from heat, drain mushrooms discarding the vinegar and garlic mixture.
  2. Combine lemon peel, thyme, chilies, salt and mushrooms in a large bowl. Mix well using hands.
  3. Heat oil in a medium pan until hot.
  4. Pack mushroom mixture into hot, sterilized jars. Pour enough hot oil over mushrooms to completely cover ; seal while hot. Store mushrooms in refrigerator.
