Meat-filled mushrooms recipe ~ Hsiang Ku Ho

Ingredients :
- 30 large dried Chinese mushrooms
- 100g lean pork
- 25g cooked smoked ham
- 1 egg
- 1 tbsp chopped onion
- 1 tbsp ground dried shrimps
- 1 tbsp cornflour
- 1 tbsp soy sauce
- ½ tspn salt
For sauce
- 150ml chicken broth
- 2 tspn cornflour
- 15g lard
Preparation and Cooking Instructions
- Remove the stalks from the mushrooms. Soak the mushroom caps in warm
water for 30 minutes.
- Mince the pork and ham and mix in a bowl with the egg, onion, shrimps,
cornflour, half the soy sauce and half the salt. Spread the mixture
over the inside of 15 of the mushroom caps and cover each one with a
second mushroom cap. put a board over them and press gently to flatten,
keeping the insides of the caps together, sandwich style.
- Arrange these 'sandwiches' on a suitable plate and place in a steamer.
Cover and steam for 20 minutes.
- Meanwhile, prepare a sauce by mixing the remaining soy sauce and salt
with the broth and cornflour. Heat gently, stirring occasionally until
thickened, bring to the boil and add lard.
- Pour the sauce over the mushrooms and serve immediately.
