Pepper burger with caramelized onions recipe

Ingredients :

  • 550g lean beef mince
  • ½ tspn salt
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp green peppercorns, drained
  • 1 tbsp cracked black pepper
  • 30g butter
  • 3 large white onions, peeled and thinly sliced into rings
  • 1 tbsp soft brown sugar
  • 4 large damper rolls
  • green butter lettuce
  • ¼ cup sour cream
  • 1 tbsp wholegrain mustard
  • 1 clove garlic, crushed

Preparation and Cooking Instructions

  1. Combine mince, salt, 1 tbsp parsley, peppercorns and cracked pepper in a large bowl. Mix with hands until well combined. Divide mince mixture into 4 portions and shape into round patties. Cover and set aside.
  2. Heat butter in large frying pan. Add onion and cook over medium-low heat until a deep caramel color, stirring occasionally to prevent burning. Add brown sugar and cook, stirring until onions are well browned but not burnt. Remove from heat. Transfer to a plate, cover and keep warm.
  3. Using the same pan, cook meat patties over medium heat for 5-6 minutes each side or until well browned and cooked through. Cut damper rolls in half horizontally. Toast, and place roll bases on serving plates. On each base, place a lettuce leaf, a patty and some onion. Spoon a dollop of combined sour cream, wholegrain mustard and garlic over onions. Sprinkle with remaining parsley and finish with a roll top.
