Serves : 4-6
Ingredients :
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 2 small fresh red chilies, chopped
- 425g can tomatoes
- ¼ cup tomato paste
- 2 large red peppers
- 1 bunch English spinach, roughly chopped
- 22cm round focaccia
- 250g Feta cheese, crumbled
- 2 tbsp finely grated parmesan cheese
Preparation and Cooking Instructions
- Heat oil in pan, add onion, garlic and chilies, cook, stirring, until
onion is soft. Stir in undrained crushed tomatoes and paste, simmer,
uncovered, about 10 minutes or until mixture is thick.
- Quarter peppers, remove seeds and membranes. Grill peppers, skin side
up, until skin blisters and blackens. Peel away skin, cut peppers into
1cm strips. Boil, steam or microwave spinach until wilted; drain.
- Split focaccia in half; place on oven trays. Spread with tomato mixture,
top with peppers, spinach and cheeses. Bake, uncovered, in hot oven
about 30 minutes or until topping is lightly browned and bases crisp.
