Pine nut sauce ~ Sulsa Snoobor

Serves : makes about ¾ cup  

Ingredients :

  • 1 slice of soft ordinary bread without crust, 1.25cm thick and soaked in 1 cup water
  • 1 clove garlic
  • ½ tbsp salt
  • ¾ cup pine nuts
  • approx ½ cup lemon juice
  • 2 tbsp water

  Preparation and Cooking Instructions

  1. Squeeze the soaked bread to dry.
  2. Crush the garlic and salt together. Pound in the pine nuts to a paste. Pound in the bread, add the lemon juice and water.
  3. Sieve the mixture through a fine strainer. Adjust salt and lemon to taste.
  4. Alternatively place all ingredients into a blender and blend to a smooth sauce, adding water if necessary.
  5. Cooks notes : This sauce is traditionally served with fish.
