Sauce Béchamel

Makes : 1¼ cups


Ingredients :

  • 1¼ cups milk
  • 2 slices onion
  • 1 bay leaf
  • 6 peppercorns
  • 1 small carrot
  • 1 parsley sprig
  • 45g (1½oz) butter
  • ¼ cup plain flour (or a bit more if necessary to get a thick consistency)
  • salt and white pepper


Preparation and Cooking Instructions :

  1. Put the milk in a saucepan and add the onion, bay leaf, peppercorns, carrot and parsley. Bring to the boil and remove from the heat at once. Cover and leave until cool to allow the flavors to infuse.
  2. Melt the butter in a pan, stir in the flour and cook, stirring, for 2 minutes. Strain the milk and gradually add to the pan, stirring. Bring to the boil and cook for 2 minutes. Season to taste with salt and pepper.
