Shrimp and artichoke casserole

Ingredients :

  • 6½ tbsp butter
  • 4½ tbsp flour
  • 1 cup whipping cream
  • ½ cup half and half
  • salt and pepper, to taste
  • 14 oz can artichoke hearts
  • ½ lb fresh mushrooms
  • ¼ tspn flour
  • ¼ cup dry sherry
  • 1 tbsp Worcestershire sauce
  • ¼ cup parmesan cheese, grated
  • paprika
  • 1½ - 2 lb shrimp, cooked and cleaned

Preparation and Cooking Instructions

  1. Melt 4½ tbsp butter. Stir in 4½ tbsp flour, add cream, stirring constantly. When thick, add salt and pepper. Set aside.
  2. Drain artichokes and cut in half. Place on bottom of casserole. Place shrimp over artichokes.
  3. Sauté mushrooms in remaining butter. Sprinkle ¼ tspn flour over mushrooms. Stir, then scatter mushrooms over shrimp.
  4. Add sherry and Worcestershire sauce to cream sauce. Pour over casserole.
  5. Top with cheese and paprika.
  6. Bake at 375°F for 20 minutes.
