Spiced chicken with fruity couscous

Ingredients :

  • 4 single chicken breast fillets
  • 2 tspn ground cumin
  • 2 tspn ground coriander
  • ½ tspn salt
  • 2 tbsp plain flour
  • 2 tbsp olive oil
  • ½ cup orange juice
  • 1½ cups chicken stock
  • 1 tspn sugar
  • 1 cup water
  • 2oz butter
  • 2 cups couscous
  • ½ chopped dried apricots
  • ¼ cup sultanas

Preparation and Cooking Instructions

  1. Dip the chicken into the combined cumin, coriander, salt and flour. Heat the oil in a large frying pan, add the chicken and cook, covered, until browned on both sides and cooked through. Remove from pan, cover to keep warm.
  2. Add the juice, ½ cup of the stock and sugar to the same pan to make sauce; simmer, uncovered, for about 5 minutes or until thickened slightly.
  3. Meanwhile, bring remaining stock and water to the boil in a large saucepan, add the butter, then pour liquid over the combined couscous, apricots and sultanas in a large heatproof bowl. Cover and stand for about 5 minutes or until all the liquid is absorbed; fluff with a fork.
  4. Serve the chicken with the sauce, couscous mixture and steamed green beans.
