Mediterranean Spinach Pie

Serves : 4-6

Ingredients :

  • 1 bunch English spinach, washed and chopped
  • ¼ cup olive oil
  • 1 onion, finely chopped
  • 6 green onions, chopped
  • 125g Feta cheese, crumbled
  • ¼ cup grated parmesan cheese
  • seasoning to taste
  • 1 tbsp chopped mixed herbs
  • ¼ tspn ground nutmeg
  • 4 eggs, lightly beaten
  • 90g butter, melted
  • 10 sheets filo pastry

Preparation and Cooking Instructions

  1. Place spinach in a large saucepan. Heat, covered, over a high heat for 3 to 5 minutes, shaking occasionally (it will cook in the water remaining on the washed leaves). Drain well in a colander, pressing occasionally with a spoon. Set aside.
  2. Heat oil in a frying pan. Sauté onions for 3 minutes or until tender.
  3. Place onions, spinach, cheeses, seasonings, herbs and nutmeg in a large mixing bowl. Blend well to combine. Stir in eggs.
  4. Brush a 25 x 30cm baking dish with a little of the butter. Line with a sheet of filo, brushing with butter. Top with another 4 sheets, brushing each sheet with butter.
  5. Pour filling on top of pastry, spreading evenly. Top this with remaining pastry, brushing each sheet with butter.
  6. Tuck pastry in on all sides of the dish. Score top of pie with a sharp knife if desired.
  7. Bake in a moderate oven (180°C) for 30 to 35 minutes or until puffed and golden. Cut into squares and serve with salad and crusty bread.
