Spinach salad with roasted shallot and balsamic vinaigrette

Ingredients :

  • 2 lb fresh spinach
  • 1 red pepper
  • 12 lg. mushrooms
  • 1 cup croutons
  • 1 cup balsamic vinegar
  • 1 tbsp lemon juice
  • 2 tspn Dijon mustard
  • ½ cup roasted shallots
  • 1 tspn salt
  • 1 tspn black pepper
  • 1 qt. olive oil


Preparation and Cooking Instructions :

  1. Pick and wash spinach. Julienne red pepper. Slice mushrooms.
  2. In mixing bowl add balsamic vinegar, lemon juice, Dijon, chopped shallots, salt and pepper.
  3. Whisk and add oil in a slow stream. The dressing should thicken.
  4. In separate bowl toss spinach with desired amount of dressing; divide on 6 or 8 plates and garnish with peppers, mushrooms and croutons.
