Ingredients :
- 1 cup plain flour, sifted
- pinch of salt
- 1 tspn caster sugar
- 1 egg
- 1 egg yolk
- 4 tbsp milk
- 2 tbsp water
- 2 tbsp melted butter
- 250g (8oz) fresh strawberries, sliced
- ¼ - ½ cup icing sugar, sifted
- 4 tbsp brandy
- 30g (1oz) butter
Preparation and Cooking Instructions :
- Put the flour, salt and sugar in a bowl. Make a well in the center
and add the egg and yolk. Mix well.
- Gradually beat in the milk and water, stir in the melted butter and
mix well. Leave for at least 2 hours.
- Meanwhile mix the strawberries, icing sugar and 1 tbsp of the brandy
together. Chill for 1 hour.
- Stir the batter well; if necessary add more water to give a thin batter.
Lightly grease a 13-18cm (6-7") frying pan with butter and place
over a moderate heat. Cook 12 crêpes in the usual way ( see Gateau
de crêpes à la Florentine); keep hot.
- Divide the strawberry mixture between the crêpes. Fold into
quarters and arrange in a buttered flambé or shallow ovenproof
dish. Dot with butter and bake in a preheated moderately hot oven, 200ºC
(400ºF), for 10 minutes.
- Warm the remaining brandy, pour over the crêpes, ignite and
serve.
