Serves : makes 2½ cups
Ingredients :
- 1 clove garlic
- ½ tspn salt
- 1 cup tahini
- approx. ½ cup lemon juice
- water
- ½ cup finely chopped parsley (optional)
Preparation and Cooking Instructions
- Crush the garlic and salt together to a paste. Mix in the tahini and
beat in the lemon juice. Gradually mix in enough water to make the mixture
the consistency of very thick cream or mayonnaise. Add parsley, adjust
salt and lemon to taste.
- Cooks notes : Tahini is a white, slightly bitter sesame paste
made from raw sesame seeds. Do not confuse it with the brown, nutty
sesame paste made from roasted sesame seeds.
