Ingredients :

  • 2 lb tilapia fillets
  • 1½ seasoned flour
  • 4 whole eggs
  • 2 cups vegetable oil
  • ½ cup of key lime juice
  • ½ cup of tequila
  • 6 tbsp of cane sugar
  • ½ tspn of cumin
  • 1 tspn of fresh chives
  • 2 pkgs whole unsalted butter
  • 2 fresh red and yellow pepper
  • pinch of pepper and garlic powder, to taste
  • pinch of Kosher salt, to taste


Preparation and Cooking Instructions :

  1. Dredge tilapia fillets in seasoned flour and place into whisked eggs.
  2. Place the tilapia in a hot oiled pan at 350°F to brown, remove fillets from pan and reduce to a melt.
  3. Add cane sugar to create a caramelized state.
  4. Place fillets back in the pan, add key lime juice and tequila.
  5. Add a spike of kosher salt and cumin.
  6. Place fillets on a plate, garnish with diced red pepper and yellow pepper, add fresh chives for color.
