Trout almondine

Ingredients :
- 4 (1kg) fresh trout
- ¼ cup plain flour
- salt and pepper
- 2 tbsp olive oil
- 90g butter
- ¼ cup flaked almonds
- 2 tbsp lemon juice
Preparation and Cooking Instructions
- Pat the trout dry inside and out
- Place the flour, seasoned with salt and pepper, on a flat tray. Toss
trout in flour, shake away the excess.
- Heat the oil with 30g of the butter in a large frying pan. Cook the
trout until browned on both sides and just cooked through.
- Remove the trout from the pan; drain on absorbent paper; cover to
keep warm. Drain the fat from the pan and discard. Wipe the pan with
absorbent paper.
- Heat the remaining butter in the same pan, add the almonds and cook,
shaking the pan continuously, until almonds are golden brown.
- Add juice, stir until combined. Pour the butter mixture over the trout.
Serve with fries and salad, if desired.
