Trout almondine

Ingredients :

  • 4 (1kg) fresh trout
  • ¼ cup plain flour
  • salt and pepper
  • 2 tbsp olive oil
  • 90g butter
  • ¼ cup flaked almonds
  • 2 tbsp lemon juice

Preparation and Cooking Instructions

  1. Pat the trout dry inside and out
  2. Place the flour, seasoned with salt and pepper, on a flat tray. Toss trout in flour, shake away the excess.
  3. Heat the oil with 30g of the butter in a large frying pan. Cook the trout until browned on both sides and just cooked through.
  4. Remove the trout from the pan; drain on absorbent paper; cover to keep warm. Drain the fat from the pan and discard. Wipe the pan with absorbent paper.
  5. Heat the remaining butter in the same pan, add the almonds and cook, shaking the pan continuously, until almonds are golden brown.
  6. Add juice, stir until combined. Pour the butter mixture over the trout. Serve with fries and salad, if desired.
