Green Beans with Cashews ~ Fagiolini con gli anacardi

Ingredients :

  • 1½ lb fresh green beans, trimmed and cut into 1½" pieces.
  • 3 tbsp butter
  • ½ tspn ground black pepper
  • ¼ cup finely chopped fresh Italian parsley
  • 1 cup cashews, dry roasted preferred


Preparation and Cooking Instructions :

  1. Cook green beans in rapidly boiling salted water until just tender, about 10 minutes. Drain, and immerse in ice water; then drain again, and set aside.
  2. In medium sauce pan, melt butter over medium-low heat.
  3. Add pepper and parsley and stir to blend.
  4. Add reserved beans and cook until heated through. Transfer to serving bowl and top with cashews.
