Cooking Cajun Food - Black-eyed Pea Jambalaya recipe

Ingredients :

  • 1 large onion, chopped
  • 1 large green pepper, chopped or half green and half red
  • 1 can rotel chilies & tomatoes, drained, reserve liquid
  • 1 can cream soup ( any variety )
  • 1 packet dried onion soup
  • 1 lb smoky pork sausage, cut ½" rings
  • 1 lb shrimp, peel, devein
  • 2 chicken breasts, cubed
  • 2 cans black-eyed peas, drained, reserve liquid
  • 1 tspn thyme
  • 2 bay leaves
  • 1 tspn oregano
  • 1 tspn chili powder
  • 1 tspn garlic powder
  • ¼ lb butter or margarine
  • 2 cups raw long-grain rice


Preparation and Cooking Instructions :

  1. Put rice in the pot and add remaining ingredients.
  2. Cut butter in pats and put on top.
  3. In a 4-cup measuring cup place soup, tomato juice, black-eyed pea juice (and any other juice you are using) plus enough water to make 4 cups.
  4. Pour over rice mixture plus 1 more cup.
  5. Cook until liquid is absorbed and rice is tender, but still a little moist.
