Cooking Cajun Food - Broiled Chicken Creole recipe

Ingredients :

  • 3 lb chicken pieces
  • salt and pepper, to taste
  • paprika, to taste
  • 3 - 4 green bell peppers, cut in strips
  • 3 - 4 tomatoes, cut in wedges
  • 1 Spanish onion
  • 1 stick butter, cut into pieces


Preparation and Cooking Instructions :

  1. Turn on broiler to heat.
  2. Place the chicken in an ovenproof pan and sprinkle with herbs. Be liberal with the paprika.
  3. Place the chicken parts, bone side up, in the pan.
  4. Sprinkle the vegetables around the chicken, tucking them in any available spaces.
  5. Dot chicken and vegetable with butter.
  6. Place in a preheated broiler and cook for 10 minutes.
  7. Turn chicken pieces and baste vegetables with juices.
  8. Return to broiler for an additional 10 minutes.
  9. If the juices run pink when the chicken is pricked with a fork, reduce the temperature to 375°F and bake in the oven for 5-10 minutes.
