Ingredients :

  • 1 cup butter
  • 1¾ cups sugar
  • 3 eggs
  • 2½ cups flour
  • 1 tspn baking soda
  • ½ tspn cinnamon
  • 1 tspn nutmeg
  • ½ tspn allspice
  • 2 tbsp baking cocoa
  • ½ cup water
  • 1 tbsp vanilla
  • 2½ cups shredded carrots
  • ¾ cup chopped nuts
  • ¾ cup chocolate chips


Preparation and Cooking Instructions :

  1. Preheat oven to 350°F.
  2. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  3. Sift dry ingredients together; add to creamed mixture alternately with water and vanilla.
  4. Fold in carrots, nuts and chips.
  5. Turn into prepared 9" x 13" pan.
  6. Bake for 45 minutes.
