Ingredients :

  • 2 cups all-purpose flour
  • 2½ tspn baking powder
  • ½ tspn salt
  • 1 egg
  • 1 cup buttermilk
  • ¼ cup butter, melted
  • 1 cup cooked, diced ham steak
  • 1½ cups grated Cheddar cheese


Preparation and Cooking Instructions :

  1. Heat oven to 450°F. Lightly grease 12 large muffin tins.
  2. In a large bowl stir together the flour, baking powder and salt; set aside.
  3. In another bowl whisk together the egg and buttermilk. Stir in the ham and cheese.
  4. Using a rubber spatula, stir the egg mixture and melted butter into the dry ingredients just until combined. Do not over mix.
  5. Fill each of the prepared muffin tins approximately two-thirds full.
  6. Place in the oven and lower the temperature to 400°F. Bake until golden brown, 18-20 minutes.
  7. Remove from oven and let stand 5 minutes before removing from pan. Cool on wire rack.
