Ingredients :
- 2 cups all-purpose flour
- 2½ tspn baking powder
- ½ tspn salt
- 1 egg
- 1 cup buttermilk
- ¼ cup butter, melted
- 1 cup cooked, diced ham steak
- 1½ cups grated Cheddar cheese
Preparation and Cooking Instructions :
- Heat oven to 450°F. Lightly grease 12 large muffin tins.
- In a large bowl stir together the flour, baking powder and salt;
set aside.
- In another bowl whisk together the egg and buttermilk. Stir in the
ham and cheese.
- Using a rubber spatula, stir the egg mixture and melted butter into
the dry ingredients just until combined. Do not over mix.
- Fill each of the prepared muffin tins approximately two-thirds full.
- Place in the oven and lower the temperature to 400°F. Bake until
golden brown, 18-20 minutes.
- Remove from oven and let stand 5 minutes before removing from pan.
Cool on wire rack.
