Ingredients :
- 1½ cups yellow corn meal
- ½ cup flour
- ¼ cup granulated sugar
- 1 tbsp baking powder
- 1¼ tspn salt
- 2 eggs, lightly beaten
- 1 cup sour cream
- 1½ tspn minced, seeded fresh jalapeño pepper
Preparation and Cooking Instructions :
- Heat oven to 350°F.
- Grease 12 muffin cups, or use paper liners.
- Combine corn meal, flour, sugar, baking powder, and salt in a large
bowl.
- Beat eggs and sour cream with a whisk or fork in a small bowl, stir
in jalapeño pepper.
- Pour wet ingredients over flour mixture. Stir until all ingredients
are combined but do not over mix.
- Fill muffin cups and bake 20 to 25 minutes, or until firm to the touch.
- Let cool 5 minutes in pan before turning out onto a cooling rack.
