Ingredients :

  • 1½ cups yellow corn meal
  • ½ cup flour
  • ¼ cup granulated sugar
  • 1 tbsp baking powder
  • 1¼ tspn salt
  • 2 eggs, lightly beaten
  • 1 cup sour cream
  • 1½ tspn minced, seeded fresh jalapeño pepper


Preparation and Cooking Instructions :

  1. Heat oven to 350°F.
  2. Grease 12 muffin cups, or use paper liners.
  3. Combine corn meal, flour, sugar, baking powder, and salt in a large bowl.
  4. Beat eggs and sour cream with a whisk or fork in a small bowl, stir in jalapeño pepper.
  5. Pour wet ingredients over flour mixture. Stir until all ingredients are combined but do not over mix.
  6. Fill muffin cups and bake 20 to 25 minutes, or until firm to the touch.
  7. Let cool 5 minutes in pan before turning out onto a cooling rack.
