Ingredients :

  • 2½ cups all-purpose flour
  • 2 tspn baking powder
  • ½ tspn baking soda
  • ¼ tspn salt
  • 1 tspn dried basil leaves
  • 1 tbsp white sugar
  • 1 cup diced pepperoni
  • 1 cup shredded sharp cheddar cheese
  • 4 green onions, chopped
  • 1 egg, beaten
  • 1 ½ cups buttermilk
  • ½ cup grated cheddar cheese


Preparation and Cooking Instructions :

  1. Preheat oven to 400°F. Grease 12 muffin cups.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, basil and sugar; stir until well blended.
  3. Mix in pepperoni, green onions and cheese. In another bowl beat egg with buttermilk.
  4. Add egg mixture to dry ingredients and stir until combined.
  5. Spoon batter into muffin tins until half full. Sprinkle remaining ½ cup cheese on top of muffins.
  6. Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into center of the muffin comes out clean.
