Ingredients :
- 2½ cups all-purpose flour
- 2 tspn baking powder
- ½ tspn baking soda
- ¼ tspn salt
- 1 tspn dried basil leaves
- 1 tbsp white sugar
- 1 cup diced pepperoni
- 1 cup shredded sharp cheddar cheese
- 4 green onions, chopped
- 1 egg, beaten
- 1 ½ cups buttermilk
- ½ cup grated cheddar cheese
Preparation and Cooking Instructions :
- Preheat oven to 400°F. Grease 12 muffin cups.
- In a large bowl, combine flour, baking powder, baking soda, salt,
basil and sugar; stir until well blended.
- Mix in pepperoni, green onions and cheese. In another bowl beat egg
with buttermilk.
- Add egg mixture to dry ingredients and stir until combined.
- Spoon batter into muffin tins until half full. Sprinkle remaining
½ cup cheese on top of muffins.
- Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted
into center of the muffin comes out clean.
