Ingredients :

  • 1/3 cup vegetable oil
  • 5 green onions, chopped
  • 2 eggs
  • ½ cup milk
  • 2 cups all purpose flour
  • 2 tspn sugar
  • 1 tbsp baking powder
  • 1 tspn dry crumbled oregano
  • ½ tspn salt
  • ½ tspn garlic powder
  • 1 x 10 oz package frozen chopped spinach, thawed and well drained
  • 7 oz feta cheese, cubed


Preparation and Cooking Instructions :

  1. Preheat oven to 375°F.
  2. In 2 tbsp of the oil, sauté onions until they begin to brown. Let cool.
  3. Beat eggs until foamy; blend in remaining oil, milk and sautéed onions.
  4. Add flour, baking powder, oregano, salt and garlic powder. Beat until smooth.
  5. Stir in spinach and feta cheese.
  6. Spoon into 12 greased muffin tins.
  7. Bake 20 to 25 minutes.
